Garden Fresh Salsa
Ingredients:
- 1 large ripe tomato
- 1/2 of a chopped onions
- 1 clove of garlic
- 1 jalapeno
- 1 large lime
- 1/4 cup of cilantro
- 1/4 cup of tomato sauce (or paste)
- 1 teaspoon pepper
- 2-3 teaspoons salt
Directions:
In a large food processor combine chopped pieces of tomato, jalapeno, onions, and garlic. If you prefer chunkier salsa then just pulse the processor to your desired consistency, but if you like smooth salsa like me then just let the food processor do its job. Add in the juice of the lime, the cilantro, and the tomato sauce. Season to taste and enjoy fresh with or chilled in the fridge for 1-2 hours to serve cold.
Note:
If you prefer spicier salsa like me then leave half the veins of the jalapeno and seeds in with the salsa, add more or less accordingly to your heat preference. If the salsa gets too spicy then add more tomato sauce to balance it out.
