Falafel and Vegan Tzatziki Sauce
Falafel Ingredients:
Makes about 10-15 balls
-1, 15 oz can of drained chick peas
-1/4 cup of minced onion
-1/4 cup of chopped parsley
-1/4 cup of chopped cilantro
-2 cloves of garlic
-1 teaspoon of red pepper flakes
-1 teaspoon of salt
-1 teaspoon of black pepper
-1-2 teaspoons of olive oil for consistency
-canola oil for frying
Directions:
In a food processor pulse the chick peas, onion, parsley, cilantro, and garlic. You want the mix to have texture, yet not too large pieces in size. Add in the red pepper flakes, salt, pepper and olive oil if you're having trouble keeping the mixture together. Using 2-3 tablespoons of the falafel mixture, roll into balls or whatever your desired shape is and fry for 3-5 minutes on high heat. Once browned around the outside, drain on a paper towel and serve hot with tzatziki sauce.
Tzatiki Sauce Ingredients:
-1/2 cup of vegan plain yogurt
-juice of 1 lemon
-3 tablespoons of chopped cucumber
-3 tablespoons of chopped dill
-1 teaspoon of garlic powder
-1 teaspoon of salt
Directions:
Combine all ingredients in a large bowl and refrigerate for 15-30 minutes. Serve cold with falafels and enjoy!
Tip:
I like to serve my falafels in half on a heated tortilla, with a smear of hummus, and some shredded cabbage and carrots tossed in the tzatziki sauce as pictured above and below!
