Potato Breakfast Hash
(Serves 1)
Ingredients:
- 1 tbsp of vegetable oil
- 1 diced yellow potato or sweet potato
- 1 small clove of chopped garlic
- 1/4 cup of diced red bell pepper
- 1/4 cup of diced onion
- 1 tbsp of minced jalapeno (optional)
- 2 tbsp of chopped cilantro
- 1/4 cup of drained black beans
- 1/2 of a diced avocado
- salt & pepper to season
Directions:
In a sauté pan on medium heat, cook the potato wedges in the vegetable oil until lightly golden and crisp. Add in the garlic, onions, and peppers until they soften (you may need to add a little more oil depending on how much the potatoes absorbed). Add in the black beans to heat them through and season the entire dish with salt & pepper. Remove from heat and transfer to a serving bowl. Top with diced avocado and cilantro and enjoy!
