Grilled Veggie Wraps with Balsamic Glaze

Ingredients:

- 1 tbsp of olive oil

- 1/3 cup of slice red pepper

- 1/3 cup of baby carrots

- 2 tsp of Italian seasoning

- 1 tsp of garlic salt

- 1 tsp of pepper

- 2 taco tortillas or 1 burrito tortilla 

- 1/4 cup of hummus (see my recipe)

- 1/4 cup of spinach 

- 1/2 of a sliced avocado

- 1/4 cup of balsamic vinegar

 

Directions:

In a saute pan, heat the olive oil and cook the peppers and carrots with seasonings until softened for about 5-10 minutes. Remove vegetables and de-glaze the pan with the balsamic vinegar for 5 minutes until the vinegar has cooked down and reduced in amount. Microwave tortillas for 10 seconds until heated and begin to assemble wraps. Spread the hummus, lay the spinach, vegetables, and avocado, then drizzle with balsamic glaze and enjoy!
