Tofu Fried Rice
Tofu Fried Rice
(serves 2-3)
Ingredients:
-8 oz of extra firm tofu (drained from liquid)
-1/2 cup of minced carrots
-1/4 cup of minced onion
-1/2 cup of peas
-1 small clove of minced garlic
-2 large eggs
-2 cups of cooked white rice
-2 tablespoons of sesame oil
-3 tablespoons of soy sauce
-3 tablespoons of chopped green onion
Directions:
In a large sauté pan on high heat (or wok if you have one), crumble the tofu into the pan and sauté with the carrots, onion, peas, and garlic. After about 3-5 minutes the tofu and veggies should be lightly browned. At this time, make some space in your pan and scramble the eggs right in. When the eggs are scrambled, add in the cooked rice and heat throughout. When the rice is warm shut off the heat, add the sesame oil, soy sauce, chopped green onion and stir to combine. Serve warm and garnish with more green onion and sesame seeds if desired!
